brewferm xmas ale

started my xmas ale today but im a bit unsure about this one, after i had got the temp down after mixing everything to the instructions to around 25deg i threw in some yeast vit and the supplied yeast but upon on stirring the yeast in it seemed to get clumpy, so i attatched the paddle to power drill to give it a good mix, i nipped out for a bit but on my return i can still see little clumps also when i took the first hydrometer reading i was getting 1070 instead of the 1065 it says on the tin.

fingers crossed for this as i have no time to buy any rescue yeast for it this week

it takes some hours before it the yeast starts working , doersn't it :wink:

Did a double batch of this in August. Plan to leave it until the festive season proper but sneaky sampling enough to tell this is one to look forward to.

just had a quick sip of this while checking with the old hyrdrometer, blimey its strong stuf, wish i had some smaller bottles to put this in as i would imagine its better drunk by the half pint rather than a pint, going to have to get some smaller pet bottles in the future

I am a newbee , but I thought if the yeast was in boiling water it would die??

I, myself, take a small cup of water around 35-40 C, fill the yeast carefully in..let it stay for 15 - 20 minutes without touching it. Then the yeast "drawn" slowly by itself. Then I stirr or mix it very well in the cup before I pour it all into the big bucket with the other stuff.
