Thoughts on Atomic Lemon

Post by Curious Brew » Sat Nov 10, 2007 12:32 am

Drank the last bottle in the fridge tonight... and then found one in the garage. D'oh! #-o

After a couple of experiments with dissolved sugar and artificial sweetener I've come to a couple of conclusions:

- Adding whole lemons contributes to the bitterness (I'm guessing the pith).

- Using some lime juice would add a little complexity.

- Tons of added sweetness is required, either sugar added to the finished product or sweetener at some point.

To this end, for my next batch I am thinking:

1L lemon juice
500ml lime juice
1kg sugar
2.5/3L water
Artificial sweetener to taste

Thoughts?

Thinking about it, a lot of the bitterness might be from the lemon peel... maybe you should try just using lemon flesh?

think most the bitterness is from the sugar in the lemon juice being fermented, mine finnished at 1.000 and is bitter, although not "dry" so guess ill be putting sugar in to sweaten it.
mabe even make some more, but will boil the jif lemon next time as this fermentation was so slow it mite aswell have been dead

From memory I think I worked out that I'd been priming my TC with 30ml apple juice. So all I did was multiply 30ml by eight (eight pints of Atomic Lemon in the demijohn) to get 240ml and then dissolved eight teaspoons of sugar in that amount of water and portioned it out amongst the bottles.

Probably easier ways to do it.
