Wye Bitter

Here's the one I made last weekend:

Grains:
3.7Kg Marris Otter Pale Malt
250g Crystal Malt

Mash Liqour: 2.8 gal treated with Gypsum and filtered

Total mash time: 1hr 15min

Hops:
Challenger 7%, 40g (22 IBUs)
Fuggle 4%, 25g (16 IBUs in theory, but I counted it as 8) for last 30 mins

Golding 20g for last 15 mins

Total boil time 90 mins

And of course!!

Yeast: Wyeast 1318 (London III). :P

You use quite alot of hop, Jim. Is that to take the edge of your sweet personality???

Well, I figured that as the Wyeast has less attenuation than dried yeast, the malt sweetness will be greater and will need to be balanced by more hop bitterness.

That's the theory, anyway!
