Will not use pellets again with this strainer. Have got 22g of S-04 flying startered. So in it goes, and now the wait.

Pellets are great








If you have a hop strainer that can deal with them :D

I find pellets nice to use, and end up with less wort lost to the hops that with flowers, but I will only use them for bittering

Does that 25l leave you with enough to keg, bottle for Derby AND supply me with a bottle for the all-important 'S-W rigorous quality control'? :lol: :wink:

I'm sure it'll be yet another cracker. I'm deciding whether I should brew tomorrow or not, and if so, what should it be?

No. I used to use a bazooka screen sort of thing but that sometimes clogged up. Now I don't use anything.

I use a hopsock to hold the pellets. A bit of green stuff does leach out but it's all very very small bits and they just go through the pump and into the conical. I usually have to adjust the wort to the right temp so there's time for the bits to sink to the bottom of the conical and I take them out before pitching.

Kegged this tonight, had reached 1.016 so 75% attenuation with 22g dried S-04. Tastes pretty good now. At 6+% I'll have to go easy on this. It's not ready apparantly for 3 months though so I can build up to it.

Am having a sneaky ½pt just to remove sediment from the corni - honest! The brew has by no means finished maturing but tastes great already with lots of malt sweetness but an elevated level of bitterness. This is 6 weeks into the 3 months min maturation Durden Park recommend. It's tasting like it's gonna be really good. I'm not blowing my trumpet in any way; it's not my recipe and the methods to make it have been supplied by advice on this forum. I'm keen to try other historic recipe's if this turns out like it's suggesting.

Am having a sneaky 1/2 tonight just to assess progress you understand. It's 9 weeks in to it's min suggested 12 weeks. The harsh bitterness has by now fallen away to a more appropriate level. It's coming together now. Gonna save this just for me I think. It's not tasting like any commercial beer, it is a beer of full of purposeful flavour and substance, it doesn't make apologies or leave you in any doubt at the moment, good beer full of flavour. Lightweights beware!
