Would you hop a stout and if so what with?
I've got some Goldings already, would that be acceptable?

Sounds interesting. I'm all up for customising a kit before going onto AG. Do you pour the hopped water from the caffetierre in with the wort when pitching yeast? I'm not really that up on the charachteristics of individual hops so wouldnt really know where to start. [EDIT] just reading the articles on hop varieties on this forum.

Be careful boiling the hops in water alone, all the calculations done with hop bitterness, flavor and aroma. With out the gravity of the wort you may extract some vegetable or undesirable flavors.
You can also just pour some hop water on them let it site for a few minutes and add to the beer, this is what I do when dry hopping.
