This is great stuff!....and I concur with andy, you are "the man" DAAB!
DAAB, one point concerning your comments on water. For one of my brews that had this bad off flavour, I used ASDA bottled spring water?? Although I must stress that this was my first brew using steeped grains (black patent), and a lot of these grains "escaped" from the grain bag and ended up in the boil, so the bad taste may have been tannins? (it was the worst of all of them, really strong off flavour).
Anyroad, I think I shall have to get one of those filters.

It was ASDA's own....not that I'm suggesting that Wal Mart are crooks who bottle tap water from Peckham Spring. 
I do think that a water filter would be a sound investment, but may start by using Campden Tablets....BTW, I thought Campden tablets are used in winemaking for sterilising the water, rather than removing chlorine. Plus, I seem to remember reading somewhere that they shouldn't be used in beer making...but I probably am getting confused here?
I never let the beer spash when transferring and always submerge the hose, and I use light spraymalt to prime as I have found it gives excellent results.

BB, how about the can opener? Is it clean and sterile?

So there's no point asking you whether you take your water from the kitchen sink, how old your house is and how hard your water is then?
I don't buy the idea about big secondary fermenters - I use a 6 1/2 gallon one - no problems.

Surely none of this would matter as I am boiling for over one hour...and the aluminium debate is somewhere I don't think we should go (other forums have suffered from this topic for weeks!)
