I don't think it's the malt. The last brew I made was with Golden Promise pale malt and because it's a light-coloured malt my pH was spot on 5.2 (well, as near as pH papers can show). The body of that brew was absolutely fine.DaaB wrote:I've had problems adding to much gypsum.

Jim, any chance you could just confirm the final recipe quantities for me - i'm not sure I fully understand at what stages to dump the hops in? By the way, i've been busy doing AG brews since my last post, including a Grolsch clone now the weather is colder - particularly impressed by this - far superior to any lager kit I have ever made!. I have to say the results are great - the only downside is the time, but I guess it's all in the prep and being a bit organised!

Someone else pm'd me for the final quantities, so here they are:
Grist
3.7kg Marris Otter Pale Malt
300g Crysatl Malt
450g Torrefied Wheat
20g Roast Barley
Hops
After 15 minutes boil:-
11g Progress (7.3%)
15g Challenger (5.6%)
60 minutes later:
46g Fuggles (4.5%)
48g Golding (4.3%)
Boil for further 15mins then switch off and add:
15g Goldings
OG 44
IBUs 36
I got a lower than expected extract (70% brewhouse efficiency), only 38, so you would need to adjust the grain up (or down) to account for your own typical efficiency. If I'd reached target gravity, I would have put 15g of Goldings in the primary as well.
