Canadian Blonde - brewing temp really low

Post by gullarm » Sat Feb 02, 2008 10:24 pm

I have stareted a brew of Coopers Canadian Blonde using saflager yeast S23.

Now when I started the brewing process the plan was to brew it in my back garden as the average temp was around 11-12 deg C.

But the temp has plummeted to around 4 deg C, and its now started snowing, anyway I have put my brew in the shed and wrapped it a lovely and cozy bath robe and also a nice green towel!

Its still brewing as the bubbles are still rising from the air lock, my temp gauge is currently showing 8.3 C, Im using a weather station external temp device to measure the temp so its probably 1 C a bit low as its sitting on top lid of the brew bin under the bathrobe.

There is not much activity going on in the brew itself, expected to see a bit more action?

In the day its peaking at around 10.2 C ( remember this is probably about 1 deg under measured ).

Now my question is, what ill effects will my brew have or will it just take a lot longer to brew out.

And how long will it take.

Im annoyed about the weather as last week was quite nice and now its blinking freezing, windy and a bit of snow!

Incidentally I have brewed this kit before with the yeast that came in the kit but I think I brewed a bit too high in temp in my airing cupboard and my brew tastes a bit too acidic, its drinkable but not quite 100%. I think it peaked at 25 deg C which I now know was way too high.
