If it's any use to you I brewed the "Sigl Weizen" recipe from the Graham Wheeler book on European Beers. The only wheat beers I was drinking then were the Waitrose own label ones and thought in my ignorance that the clove flavour was from an infusion of the spice. On brewing to the GW recipe I was amazed at the very clove-like flavour.
I can't remember if I brewed to the 23l or 25l recipe but finished with 25l at an OG of 1048 from:
Maris Otter 3680g
Wheat Malt 1980g
Start of boil Hallertauer 35g
Last 15 mins of boil Hallertauer 15g Irish Moss 10g
The yeast was 57th generation Crouch Vale, so is it the large amount of wheat malt combining with the rather limited of hops that gives the cloviness?
I only did the brew to help use up a 25k sack of wheat malt. I won't buy another unless I can split it.
