I remember last year when DaaB brewed his Fullers London Pride , he commented on how quickly it matured - forgive me for not dredging up the original post...
well it struck me that when i brewed an FLP it also matured very quickly and here i am drinking an exceedingly good beer (if i say so myself!) which is not FLP but the grain bill is very similar. I brewed it 3 weeks ago today and have been drinking it happily for for the last week. I have other beers which have been brewed earlier and are only just ready, or not yet ready.
so i'm wondering if others find this...
... is it the maize? something to do with FAN?

There are a couple of reasons that you can get a London Pride clone ready quickly. The biggest one has to do with the yeast strain generally used. WLP002 (or whatever Fullers strain you use) is known to be a great floculator so it falls out of suspension very quickly and the beer is clear in a hurry. The other nice thing about the brew is the relatively low gravity (about 1.040 OG if I remember correctly). Finally, since bitters are hop accentuated, it is normally a good thing when the hop flavor and aroma are fresh. By the way, I made some of this brew in the fall and was very impressed (and it was gone all too soon).
Another beer I do when I want something to drink quickly is a weizen bier. The beer seems to taste better when it's young and of course you don't want it to clear so the more yeast floating around, the better.
