Get advice on making beer from raw ingredients (malt, hops, water and yeast)

I tried out my attempt to make a Widmer Hefeweizen clone today.....it was an interesting experiment.......they say they use an "alchemy blend" of hops for bittering.......Horizon, Magnum, and Warrior (I used a third of each) and from what I've read they originally used a German Alt Yeast, so I used the American Hefeweizen yeast and the German Alt for a yeast blend.......I'm going to try and harvest this blend and use it for three or four generations........

The American Hefe yeast is Widmer's yeast. It originally came from Zum Uerige which is a alt brewery in Dusseldorf.
I've not used it though.

Wyeast 1007 is an alt yeast that is supposed to be good for an american hef style beer.
I'm just here for the beer.

That's what I understand......over time they have developed the Alt into their own yeast.......that's why I blended the two together to try to get closer to their original yeast and to try to get my own house yeast for my batches that I brew.....

I'm either good or lucky......it turned as good if not better than expected, I'm going to brew it again and a keg of my Irish Red for a dart league party......that out to get the BMC drinkers

The yeast blend worked really well......I'm getting ready to brew batch #2 from this experiment sometime this week........
