I was thinking about trying this in the morning

2 kg Golden Promise
3 kg Optic
250 grm Melanoidin
100 grm Carapils
100 grm Biscuit

Saaz 3.8% 25 grm 30 mins
Nelson Sauvin 13.3% 15 grm 30 mins
Aurora Super Syrians 3.3% 25 grm 60 mins
3 tsp grains of paradise 10 mins
Protofloc 10 mins

30 grm of Saaz at 80 degrees after flame out

Any suggestions welcome :D

Stick to one hop for steeping, out of those three I'd go with the Nelson Sauvin (Got to get me some of those)

TBH any one of those three is excellent as a steeping hop, and would work on its own. I'm just not sure if the Aurora/Nelson sauvin would overpower the spicyness of the saaz which is pretty subtle. I also think the citrussy notes of the aurora would not complement the NS

TBH i never used the Aurora or Saaz although i was really impressed with Saaz as a late hop in Galway Hooker

It's your fault Wez, Hookey Street went down so well with everybody that it died a very quick death :D . I think i'll go back to my once trademark early brews, 5.30 am kettle on me thinks

Sounds good. What does the Grains of Paradise add? I've never used it in brewing or cooking?

I got them for a Chimay clone that i ended up using as weed killer :oops: I tried them again in another brew and couldn't taste them so as this is lighter than what i usually brew i thought i'd see could i finally taste them. They're supposed to give a slightly spicy twang but as i've yet to successfully use them i can't confirm that. To me they just smell like spicy pepper if that makes any sense
