Norfolk Wolf Porter

Post by yojimbo » Sat Mar 15, 2008 6:10 pm

I am doing this from the real ale almanac

Mild ale malt 90%
crystal malt 4.5%
chocolate malt 3%
roast barley 2.5%

Challenger and styrian goldings for bitterness.

I have not used mild ale malt before and was woundering if there is anything to be carefull with or do I just treat it like normal pale malt .

Also what sort of bitterness units should I be looking for I have seen some as high as 38 EBU,s for porters.

Not going to to this untill next weekend so any advice before then would be great.

I've used mild malt in the Hook Norton recipes in BYORAAH, where it's used 50/50 with pale malt. There are a lot of adjuncts in these recipes and the mild ale malt is used for its diastatic(hope spelling is right) properties. Didn't treat it any different.

yojimbo as a Fred Dibnah fan the Hook Norton brewery still uses a steam engine to pump water in the brewery, worth a visit.

Just fill in the amounts that corresponds to batch size you want to brew, for the grain any way
