Get advice on making beer from raw ingredients (malt, hops, water and yeast)

My 1st AG has ended with an infection of some sort. I think it was brought about by me accidentally allowing air back into the keg via the tap. This happend around a week to ten days ago and is now noticable. It's lost all of it's hop taste and aroma and has taken on a sour taste. So i'm now down to two kegs for the party next weekend - the ipa (around 20 pints left) and my complex dark bitter (around 30 pints left).
Ah well, live and learn.

Call it lambic beer and serve it to the ones you dont really like.

Out of interest, do you know how much of the brew you had already drunk while it was still sound?
Any loss is a 'loss' but I need to know it was half a keg or less - there's something completely regretful about spilling 40 pints down t'drain. Which I am about to do to one of mine due to tannins. Just not got around to it yet ... in fact I'm putting it off it's just too painful.

If you can spare the storage space I would let it ride out unless your 100% sure it is an infection.

Madbrewer - Looks like around 2.5 gallons left from a 5 gallon batch, so around 20 pints to waste.
iowalad - Was thinking of that but already taken the top off. Looks like it had some sort of growth on that too

I did clean it (in thin bleach) but as I was in a rush I wasn't as thorough as I normaly would have been - I didn't take the s30 valve apart. The little rubber valve inside the cap had a sort of white crust which I assume was from the temperature of the co2 causing condensation then freezing it. I doubt this caused the infection but I should have been more thorough in cleaning.
That's the first beer I have screwed up.
I'm going to be wearing black today.

Any dodgy beer I have I cook with, stews, pies etc. If you're having a party make a student-esque punch out of it, but dont forget to add a few shots of baileys for that je ne ce que

I think it's beyond that tbh.
I've just dropped off the remaining 2 barrels and gave a few of the lads a taste and they really liked the complicated dark bitter (strange considering they usually drink lager and this is more of a brown ale) one said it tasted like double maxim, not sure if that was a compliment

The IPA was given the thumbs up too but that's still a bit green, hopefully, by next Saturday it will have matured just enough to have dropped a couple of ibu's and for the hops to mellow a little too. I think serving it cold would be a good idea to help those other lager drinkers to enjoy it

Nah, it's been tried and tested (several times) and due to the gas it would really suit being chilled to around 7C, especially if it's a hot day (which it doesn't look like its' going to be)

I'm just preparing to pour away my first AG brew - didn't start the starter early enough, fermentation got going by 48 hours but the die was cast by then I think. Has taken on almost a sickly quality! Strange, you know in your heart that it has to go down the drain, but it still takes some time to prepare yourself!
Still, was a learning experience, and a few modifications have got AG #2 off to a flying start.

Mine is still sat next to me. I'm gonna set another off on Wednesday so it'll go then, unless the beer fairies rescue it before then.
