Well thought it was time to brew again and having lots of cascade that needs using thought i better brew this ,the recipe is pretty simple 5kilo of pale malt 250 wheat malt and a all cascade hop bill.My only concern was how much the cascade hops alpha and beta percentage had dropped after a year in my pantry i was told that it could be the a/a level drops from 6.8 down to 2.1 so lets hope this estimate is right its been obvious some other hops i had stored better[in freezer in airtight bags] had also lost some of there character.I intend to keep to the oringinal hop bill equivalent of 5.2%x92grams in the copper then last 15mins 5.2 %at 27 but then i am going to add the same equivalent after the boils dropped below 80c.I will use us05 yeast .If this beer turns out too bitter i am contemplating brewing another batch adjusting the hops schedule and blending them together

brew day went fine i did notice the mash temp after 90mins was 63 degrees which is a little lower than i usually achieve.I managed to add the last aroma hops at 80c and left them in the boiler for 40mins i cheated in bringing the boiler temp down by adding some cold water otherwise i would be up all night .The worts lenght is a little over 5gallons with a 4.5% gravity reading.I added the us05 this am after leaving the wort in a f/v in a bath of cold water[yes nothing but high tech at this brewery] theres a healthly head formed already and the inital smell from the wort is promising
