T-58 has stopped working

T-58 has stopped working

I used T-58 for wheat beer whose OG was 1060 it has now or seams to have stopped fermenting at 1022 was at 1022 on day 4, its been in the primary for 6 days, daytime temp around 21-22 and at night it drops to 19-21. Had a taste and its still a little too sweet but smells just like Hoegaarden.

Does it just need an increase in temp to finish it off at around FG 1012-14?

Any ideas would be appreciated

I have used it a couple of times for strong Belgian golden ales, it did nit attenuated as much as i wanted either :(

So if i am stuck with a sweet brew how do i or can i loose some of the sweetness, would dry hopping help?

you could try gently rousing the yeast again and give it a week or two in the primary

Oddly enough I don't have that trouble with this yeast, always attenuates quite well when i've used it.

What you can do, and usually never fails when I do it, is rack to another vessel. Whenever i've done that it kicks the yeast back into life. Rousing should achieve the same job though.

I did rouse it and it is working slowly i think its not gone to well due to the age of the yeast it was close to its sell by date and Mr Malty said i should of pitched 2.5 packets. I only had 2 so maybe that's the problem. Will remember to check sell by date next time. #-o

The rousing worked it is now at 1014 and tastes better too.
