Unusual additions

Hi all,
can anyone tell me of any unusual additions they've put into their brews and when it's the best time to do this.
I read somewhere that you can use honey, was this instead of sugar and how much.

Experimentation is the real factor here, there are no hard and fast rules of what works with what, if it were me I'd start off replacing 1/2 the sugar for about equal or greater amounts of honey and then see what it's like
