Hi, When i brewed mine i put in 40g of fuggles to replace Cascade. John

I have tried it with Galena and Willamette, both produced excellent stouts. You will have to adjust the quantities to hit the correct bitterness. The hops are a small part of the flavour profile in this stout as they are mainly for bittering. I feel its the combination of malts and water that give this recipe its bountiful taste.

I agree bandit, a beautiful recipe you did, tastes fantastic.

Bandit, I fancy a go at this but I've never heard of / can't find carafoam, does it go by any other name ?

Carafoam significantly increases foam/head retention and body of the stout. Also sold under the names "Dextrine" and "Cara-Pils (TM)"

Hi Roger,
When I brewed mine I put in 250g of torrified wheat instead of the carafoam, no worries with the head retention, just like draught guinness!!

Best brew i've ever done in 25yrs!!
