Looking at doing something like this next week in preparation for the Summer...
4.50kg MO
0.25kg Caramalt
0.10kg Chocolate
0.06kg Roast Barley
50g Northdown 6% 60 mins
40g Bramling X 7% 80' Steep
20g Bramling X 7% Dry (whatever I've got left really)
Can anyone give me any ideas of taste for steeping 'v' dry hopping? I usually do both but if one's better than the other for aroma/taste, I can put most in there so not 'wasting' any
Also, would upping to 250 g of chocolate have a large effect - if so what?
Lastly - does that work out a bit too bitter to the point of being unbalanced?

Just for a reference point, I used 70 grams of Carafa II which is a de-husked chocolate malt in a 5 gallon batch of Vienna lager and it gave a nice dark amber colour and just a tiny hint of roasted flavour. I reckon the same amount of chocolate will do the same. Like DaaB said a little really goes a long way. Then again I did grind mine up to a powder so it probably went a bit further.
