Flower additions

Post by farleyman » Thu May 08, 2008 12:03 pm

I would like to try and brew a beer with a slight elderflower flavour.
Can anyone suggest how much dried elderflower I should add to a 6 gall. brew and when should it be added.
Thanks.

There was a brewers contact about this - 80g of ripe flowers 15 minutes before the end of the boil for 40 litres. Although those were fresh not dried by the looks.

Full article in the March 2006 issue in pdf.

There are some recipes for elderflower beer on the forum
Use the search facility and elderflower

Got to say that mine didn't work out. I never liked the taste. If I did it again I'd brew more of a light summer quaffer with them and use them fresh (mine were stored in the freezer for a period before using them).

Good luck,

Matt

Be careful with your Elderflowers, there are 2 types, one smells like cat wee and the other smells nice. sniff and see...

You might be mixing up elderflower with rowan. They have similar leaves and, from a distance, similar white sprays of flowers. Or your elderflower might have had a cat wee on it.

I really enjoyed mine and will brew again before the year is out HERE

50g in 25L works well IMO

I second this post. The difference is amazing, and not due to cat pee, unless they are bothering to climb out along the branches for a leak or can reach 6 to 8 foot up  Also not too many rowan trees in the flatlands of South Anglia.

Parp Rambling Answer Warning!

Isnt there some sort of method of cold extraction?

Boiled cool water in the fridge for 24 hours then strain off the solids ?

Champion Ale is the Elderflower one which is lovely!

I did an elder ale using 50g in 25lts and it was ok, the dried stuff from youngs.

I would hope if you buy it from a HB shop you won't get the cat pee variety!!
Although, I bought some yesterday because I'm going to make another one for the summer and my cat was going mad for the bag like it was cat nip or something.

Does anyone know which hops are used in the Champion Ale?

Quite right scarer, Champion it is.
Still 4 for a fiver in Morrisons. Not bad.
It is Youngs dried flowers I have so I`ll put the lot in.
As for hops I think I`ll try Bramling cross and Styrians.
