Something I didn't say about the Hefe.

I harvested the yeast slurry from my last Hefe which was second generation from a previous batch on the 16/09/07.
It's been in the fridge ever since lying dormant..ish.

On Monday I took it out and made a 1ltr starter, by Wednesday nothing had happened so I pitched packeted Brewferm yeast onto this brew.

I kept hold of the failed starter after remembering DaaB saying it sometimes take a while for the lazy yeasty buggers to start work...and tonight guess what.... :lol: the 2ltr pop bottle started to expand and the yeast has a head on it :roll: 8)

It would be cruel to throw them away now, perhaps another Hefe is calling :lol:

Get the next Hefe going V1-you know you want to.

Double brewdays are great! A few more hours for twice the ale. Gets boring at the end but i love em.

V1 your the star. 8) Lets see the next Hefe then? Pic's?

Oatmeal stout update.

I opened the fv's yesterday to skim the yeast head and took a hydro reading at the same time. I expected the S04 to have finished by then (48hrs) and was very suprised to see the gravity had only fallen from 1048 to 1030 :?
The fv's were sat in a cupboard on a stone floor and the air temp was 18 deg. I've had a couple of S04 brews that have struggled at 18 deg. My reasoning for 18 was that the fermenting wort will be at least 2 deg's higher. I think in future I'll up the minimum to 20 deg IN THE FV.

Anyhow, I removed them and put them in the front room and in the last 24 hrs the stouts fallen another 12 gravity points to 1018.
It would be rude to throw the trial jar sample away so it was duley swigged, sampled by myself and MrsV1 and it's absolutely delicious right now...loads of chocolate 8)

It's nicked form Clone Brews and it's a mighty fine recipe IMO Mtf :wink:

Quick update on these brews. The hefe is on tap and MrsV1 is drinking it.
I'm not that keen on this one, I definately prefered the W1068 yeast.
It produced far more phenols and you could at least identify clove and banana. This brewferm yeast seems to have imparted little in the way of phenols or esters...shame!

The oatmeal stout on the other hand is already belting. I poured a glass tonight, as I was tapping the 3 remaining untapped C's that were in the kegerator.
It's aroma is full and chocolatey and it's as smooth as a beer this young can be, given another 4 weeks this is going to be another absolute cracker 8)

Definately keeping this recipe as a house stout 8)

I might just pour another :whistle: :beer:
