This is going to be my next brew, i've adjusted the recipe from BYORAAH to account for a 23L to 25L batch and my average efficiency (73) and have come up with this:

5100g MO
goldings 30g full
fuggles 54g full
goldings 16g last 15

90 min mash at 66 degrees
90 min boil

Can anyone answer these questions for me?

A) In the book it gives an alcohol content of 4.3% but at an eff of 73% upping the malt from the 4700g (for 23L) to 5100g for (25L) would give me a 4.8% beer, is that too strong for this beer? Should i just leave the malt weight at 4700g which at 73% eff would bring it down to 4.4%?

B) Is there an 'assumed efficiency' that this books recipes are based upon?

C) The book says a 2hr boild (as do most of the recipes) is a 90min boil which seems to be most popular goping to be ok? or should i go exactly with the book and boil for 2 hrs?

One or two observations about your proposals, which differ somewhat from my 2001 edition of BYOBRAAH. In my book, for 25 litres, Wheeler indicates

4660gm Golden Promise
42gm Styrian Goldings 90 mins
35gn Fuggles 90 mins
15gm Goldings 15 mins

At the start of the book Wheeler gives the Alpha Acid of Styrians as 7.9% and that of Fuggles as 4.5% so certainly in the case of the Styrians some upward adjustment appears necessary.

Styrians Goldings are apparently a variety of the Fuggle and have a unique grapefruity flavour of their own. In my view ordinary Goldings cannot be perceived as a replacement for Styrians.

In Wheeler's other 'Home Brewing' book he assumes a mash efficiency of 75% whilst indicating that most home brewers should beat that.

However, I suspect your 73% refers to brewhouse efficiency, in which case 5.1KG x 297 =15147 - 27% = 1105 divided by 25 litres comes out at 1044

Thats actualy worked out quite well, i've arranged to pickup a bag of Styrian Goldings tomorrow from my local brewery :D

I'll have a fiddle with the figures :-k

My copy of BYOBRAAH, also 2001, says that all the recipes have been designed assuming that a mash efficiency of 80% will be achieved.

Whats the difference between mash and brewhouse efficiency. The 73 that i have mentioned has been based on the OG reading from the wort prior to pitching the yeast. :?:

Im fairly certain that Landlord has styrians added to the hopback, I recon some flameout styrians often give a pretty good approximation of the Landlord aroma.

Flameout - does that mean at the point the boiler is switched off?

As onlooker points out you want to be steeping loads of hops at the end of the boil or using a hopback to get that strong hop aroma. I usually steep about 60 grams per 5 gallons, all at the end - I know this seems like a lot, but it works really well.

Have brewed this recipe several times. I found it very good close to the real thing.
