well done Bm, missed your brewday somehow, but you have some great pictures, a fv of beer and lots of enthusiasm!

DaaB's right on the S-04 thing, it's probably the best thing to do as I find US-05 a bit unpredictable on the clearing thing, sometimes it does so-so and other times it stays very cloudy. I've never had a totally crystal clear pint from it even after isinglassing it.

anyway, you'll enjoy this brew, it's a cracker, but remember I can't take the credit for the recipe as it's from a great book. Marc Olloson - Real Ales for the Homebrewer. You can usually pick it up on eBay or Amazon Marketplace, some excellent recipes in there.

Nice job BM. I will shortly be brewing my first AG since the 1980's. That recipe looks great. I will be brewing Ruddles County first, but this will be next on the list. Let us know how it turns out.

Hmmm, got back home last night to find the foaming head gone on my AG. It now has some globs of yeast floating around on top and the lock is bubbling every few minutes now instead of every few seconds (it was about 40 hours in at his point).

Is this ok?

Got the wherry kit going last night just in case.

Also purchased Marks book - thanks for the heads up :)

The yeast globs are normal (I never use air locks so I can't comment on the rate of bubbling).

Just took a sample from the tap for some measurement and it's down to 1011 already :shock: (day4). I guess rehydrating the yeast really did give it a head start.

I then gingerly tasted said sample, very very bitter, nice smell and very pale and tastes rather strong abv wise. The beer is still very cloudy at the moment, I'm wondering if I could keg it on sat/sun?

The wherry kit backup is still foaming away nicely.

If your down to 1011 already i see no probs kegging it at the weekend. dont forget to prime the keg fella.

Aye, hopefully I'll remember to prime - don't want it too fizzy mind.

Will the bitterness abate a little during the 2nd fermentation process?

44 IBU is going to need 6 weeks in the keg until it is palatable … well to my tastebuds anyway … others may chime in with disagreement on that.

Kegged this into a corny tonight @ 1010. Was lovely and clear already thanks to the s-04.

Didn't bother to prime as have a pub gas setup curtesy of my local freehouse :)

It's now sat in the coldest cupboard I have @ 12psi - hope that's right?
