Brewing the following this pm:

ABV 4.1%
IBU 13
Mashing @ 68°
Eff 75%

2kg Wheat
1.2 kg MO
700g Munich

Hersbrucker 2.1 AA, 35g full boil
Hersbrucker 2.1 AA, 20g 15 mins

Fermenting @ 21°C with WB-06

Not a quick win as am bottling but hopefully this will be ready in 3 weeks.

I was gonna do a hefe today but don't have the Halletauer Hersbrucker for it. Good luck with that, it'll still be quicker than a bitter even if you do have the fag of bottling.
Have you used that yeast before? I've got it but not used it yet.

I'm a WB-06 virgin too. Hoping it responds well to a DFS.

I'll have half a gold block of Hersbrucker left and it will probably sit in the freezer. Do you want the rest Si? Happy to whack it in the post tomorrow if its useful to you.

Very kind, but I've got 6 corni's full and am cooling Tabby's Best Bitter at the mo. Good job the wife is at work, she's been very tolerant of beer stuff lately - can't last :lol:

I would have had them though, cheers matey 8) .

I didn't take any pics as my setup isn't all that photogenic. What's in the grain bill for your dunkelweizen?

I hit 22.5 litres @ 1040 on the nose. A good brewday was had and I managed to a days work around it.

Yeast head has formed in 3hrs, good old DFS 8)

I have recently used WB 06 on a couple of batches of wheat beer.

Its really nice I know its probably not quite as good as any of the liquid yeast but it can be easier to use as you dont worry too much about waking it up first like a liquid yeast to check its viability.

Its another yeast thats made it in too mystores cupboard, alongside s04 and us05 as everyday yeasts.

It will soon be ready Matt then you can let us know what you think

Went for 17oC on both batches it seemed to work quite well.
It will be interesting to see the difference between 17oC and 21oC

My last wheat beer was fermented with WB-06 at 22C and it tasted almost identical to Wyeast 3068.

To be honest I found the WB-06 far nicer, you’ll have a cracker of a brew there.
