Well I was wondering something similar ... and that is if he aerated too warm. Aerating warm would not allow the wort to retain much O2, it could easily be given off. Had a taste of the beer last night with my neighbour, he commented about a TCP taste, could this be the reason it did not start fermenting as it normally would?

Mixbrewery uses just such a system.I've been toying with the idea of cutting a hole in the stainless lid of my Burco to make a steam scrubber (tiny jet of cold water in the pipe to condense the steam), but I have been reluctant to cut a hole in my precious stainless lid in case it all goes wrong or doesn't work too well.

Its a valid question. personally I would go with insulating the lid and pipe, to minimise condensation and 'drip back' into the boiler . . . I would also remove the lid and pipe while cooling, as its this point where the volatiles (like DMS) are still being produced, but not being driven off as effectively.stevezx7r wrote:I always thought that not allowing the steam to escape also trapped particles which can/may cause undesirable tastes in the end product....Thoughts on this anyone?
I Use 90% lids, which are insulated, on my kettles so steam and volatiles can escape and little condensation occurs one the boil is underway. the lids are removed during cooling
