First Extract; Split batches ?

I'm currently planning my first extract brew; which will be the first of a number whilst I obtain the rest of the equipment I need (and convert the space to put it) for going AG

I'm planning on buying a 15kg Jerry can of Brupaks Wheat extract to make a number of weissbiers; firstly two 5-gallon batches of Bavarian Weissbier(ish) - to do this I intend to attempt the following;

Boil a normal strength 5 gallon batch; but double the hop additions; then split between two FV's. I was then planning on adding the required extract directly to the FV's and topping up to volume with cold water (if my chiller isn't ready by then - I don't see haze being a problem in this style either) - or if it is ready then I was going to just do a quick boil of the second batch with no hops purely for the hot break.

Any ideas if this'll work ok ? If so; which is preferable (I'm guessing the second option)

Finally (sorry to drag on; first post and all .. :) ) - any ideas if the 7 gallon buckets as sold by H&G are suitable for boiler conversion ?

I did wonder about that - my worry about adding the extract late on in the boil would be the high SG of the wort and the risk of caramalisation - I guess you think it'll probably be ok ?
