I put 2 tins of brewferm Grand Cru and a kilo of spray malt in my FV yesterday, topped up to 18 litres and put a tea-towel over it.
this morning there is a 10" head on the brew, pushing the towel 3" above the top of the FV.
should I skim most of the head off and put a new cover on it?

Yes. Preferably the lid that came with the fermentor, you don't want a teatowel falling into your beer, the chances of infection will be huge. Give it a sanitizing first, obviously, and place it on the fermentor. Don't clip it down, or it will end up on the other side of the room :D

Don't skim the head off! The head is your yeast working. But DO change the lid!

ok, thanks max, the lid is now on. never had a ferment like that before...
