Just about to kick off a hoppy lil number. I'm using amarillo only in this one along with MO grain plus around 150g TW and will use us05 yeast. I've ony used this yeast once for one of my last brews where I made two similar beers - one with s04 the other with us05 - the difference is noticable. The american yeast doesn't seem to have the same sort of fruitiness which the 04 has so it suited my style very well.
Anyway, i'll take pics as I go today as I haven't done that for a while.

I'd go with 60 mins personally; I've never noticed much difference in the resulting beer compared with 90 mins, and it is nice to shave a bit of time off the brew day.stevezx7r wrote:Cheers MM, just doughed in but trying to decide if I want to do a 90 min mash or keep it at 60...

Into the last few mins of the boil, just put the IC and Irish moss in. Not sure how long the mash was as I got, er, sidetracked (blame the missus
).
Strange thing is I've just taken an adjusted gravity reading and it's WAY higher than I planned for at 1057 ! This is going to end up in the high 5% ABV and not the low 4 as I planned. I did adjust my efficiency to 65 % thinking that's what I tend to get but it's obviously a lot higher than that. Anyway, will post pics later.

5kg Marris Otter
50g Amarillo 8%AA (boiled for somewhere between 60 - 90 mins)
50g Amarillo 8%AA Added once wort was at 80C and left for 30 mins
Irish Moss in at last 10 mins
IC in at last 10 mins
US05 yeast, which now has a nice krausen on top, fermenting at 22C
