AG#6 Vulcan Bomber APA

Post by adm » Fri Aug 08, 2008 2:56 pm

Today we (myself and my assistant brewer, Mr Fritz Great-Lakes) are attempting an American style IPA:

5kg Maris Otter
250g Crystal
150g Torrefied wheat

25g Cascade 90 mins
25g Cascade 30 mins
25g Cascade 15 mins
25g Cascade 1 min

Safale US 05
Protafloc

This is called Vulcan Bomber as we have an airshow right near to the house on 24th August - complete with an appearance by the aforesaid aircraft. This beer's for that day - too short really, but it should still be drinkable. If it isn't, I've got lots of others in already! 9 days in FV then a week carbonating and conditioning in a corny?

Here's the grain bill

Set up ready to go. First ever outside brew, but we've got friends here and the missus needs the kitchn. I had a problem here - the extension lead on the right couldn't take the power requirements of the two kettle elements, and melted! I had to quickly wire up a spur from the ring main in the garage and a double socket box!

The Assistant brewer begins the mash in.

Mashed in!

Temperature seems good.....off we go!

That's all for now.

Here's the rest of the pics....got a bit too "relaxed"yesterday to get them up!

Image
Relax, don't worry and have a homebrew.....

Image
First runnings

Image
Batch sparging. I could really use a separate HLT and boiler......

Image
Cascade hops. 100g in total. 4 additions.....

Image
Boiling away nicely

Image
This is the sample of the sweet wort - 1042 before boil

Image
More hoppiness.....

Image
Running off to FV

Image
and the sample from the finished product - now 1050 OG after the boil.

Image
Finished up just in time for sunset, another brew and a visiting hot air balloon. Must have been attracted to the smell....

So - as per Vossy....barbie and beers at mine on the 24th!

Hmmm - good effort - US-05 in 1050OG too! Gonna come in at about 6% if it does it's normal trick of keeping going and going in the FV!

Nowt wrong with that though

Definitely found that finings help with this yeast when I used it for a Townes - dropped bright in a keg with kieselol finings in about a week.

How would you recommend fining? I was thinking about it for this beer anyway as i want it ready for the 24th.

You mentioned kieselsol - do you use that alone, or in conjunction with something like gelatin or chitosan? And if so......what's the process and timing?

When I made my Townes (which is all cascade, but some wheat and no crystal) I used "Kwikclear" (which is a two part kieselol and gelatine finings) and it seemed to work well - some have said that US-05 is hard to clear, and others say it will clear given time to rest.

Waited for it to finish fermenting down (it took a week or so to finish out - you have to measure the gravity - US05 leaves a thick crust so it's not obvious when it's done...). I skimmed the head off, and added the kieselol first when racking into a keg, and then added the gelatine finings after 30 min giving it a good stir. Then I left it to sit still in a corner for a week or two (taking the odd quality control sample  ). It looked crystal clear after a week to two weeks.
