I just put my first Whitelabs English Ale Yeast brew into the keg last night (also bottled a couple of pints).

The taste seems pretty good, and that strain of yeast glues itself together to give one of the firmest yeast deposits I've seen. Very good.

It took about 15 minutes to clean the yeast ring from the top of the fermenter though! It was stuck on like araldite.

I was thinking of brewing an extract recipe to use up some tins of extract and hops I have leftover. Recipe will be "off the cuff".

Hi Andy,

I've got a full corny of a strong ale, two of a lagered ale, 1 and a half of hefe, half a corny of mild and one and a half of bitter. You shouldn't let the fact that you have beer stop you making more

Yesterday went extremely well. I didn't weigh the malt as I had a 25 KG sack that I opened on Wednesday for my IPA.

For that brew I weighed 1 kg and put it in a bowl then used the bowl to estimate each kg I put in the mash tun. So I brewed with an estimated 12 kg of malt on Wednesday and achieved 87%.

So I reckoned there was 13 kg left so I formulated my recipe to use 13kg of pale malt last night and ended up with an efficiency way up in the 90's. I can't believe I got that high an efficiency so I can only think I need to put more effort into measuring the grain. I'll buy a spring balance which should help.

I guess I ended up with about 52 litres of 1.074 wort in the fermenters which, if I had used 13kg, makes 95% efficiency. I don't trust the figures and will do things a little more accurately next time to get a true figure but whatever happens, I know I'm getting good eficiency now 8)

Off the cuff recipes are good. I quite often just use up the left overs.

And Jim, nice one! 8)

Some of my best beers have been "off the cuff", or "bung it in and see recipes"! :D

Hop & Grape will be rubbing their hands, I have just sent them an order for grains, hops, yeast, wine kits, steriliser, corks, etc.

My new brewing season starts here! :D

Just bottled(24 flip top bottles) and kegged the remainder of a brew that has been sat in the secondary for a week...Its called "wifes want"(because my wife wants it to be like Deuchars IPA 8) ),threw the recipe together myself, colour is looking about right and the hop aroma is close also.
Gonna find it hard to leave for 3 weeks(which is why i bottled about half  )

Nice one Colin. A nice hoppy beer if I remember it properly. The waiting part is always the hardest :)

Horden Hillbilly, did you quit brewing over the summer months?
Yes, even in the frozen north it gets too warm for sucessful brewing.

It is not a problem though, In addition to my 4 king kegs I have 16 beer crates which hold 12 bottles each which are filled up well before it gets too warm, I also have a small fridge in the loft which is used only for chilling beer, lager & wine.

These are not all mine, they are shared between Mrs H and myself, she prefers lager & lighter wines such as Rose, White, Peach & I prefer bitter & Red Wine.

Thanks! The boil has just finished and I am getting ready to run the wort through my chiller and into the fermenters. :)

A nice constructive weekend hobby indeed. I'm getting ready for the first all-grain & I'm torn between Jim's House Bitter & Palmers English Special. Need some Fuggles for Jim's & some flaked maize for palmers.

Jim do you boil for an hour and a half?

Matt
