Safbrew T-58

Anyone dried this dried yeast strain?

I'm thinking of trying it out in a Belgian Wit. I tried WLP400 in my last one but I found a bit too clean for my liking, I'm looking for something a bit muskier & spicier. I'm also looking at Safbrew S33.

I've used it once in a pale summer ale where I wanted a bit of spiciness from both the yeast and the hops. I'd say it'd probably be pretty good for a Wit - especially when you serve the beer with even a tiny bit of yeast in it it smells very wit like.

Thanks Steve I think I'll go ahead and try it. What kind of yeasty flavours were you noticing?

When the yeast is in suspension it smells and tastes a bit like Hoegaarden. When the beer is bright it's just 'interesting'. Nothing that says wit beer but it still is different to a normal ale yeast.

I'm just using t58 on a brew - smell reminded me of the smell you sometimes get with Shepherd neames ales - slight sulpherous whiff.

Anyhow it went mad for the first 30hrs or so, but then seemed to have dropped right back - I havent tested it yet, but wondered if anyone else experienced this with using it? I normally use Gervins and that tends to be steady for 2 or 3 days and then gently slow to a stop. T58 was quite abrupt.

It was pretty fast when I used it IIRC. You'll want to give some time for the yeast to flocculate out though.

I used it this weekend and it did exactly the same. I've used it before - you need to give the beers time to age with this one.

all is well - fermented out completely in spite of my earlier concerns!

Hi, Latest AG Westmalle Dubbel using Safbrew T- 58, recommended temp range 15-24c fermented nicely down over 4 days from 1.058 (a little shy of 1.064 target) to1.020 for the last 2 days, temp at the low end 16-17c do I now sit and wait, up the temp or what :? .
This abrupt stop seems to have happened to others using T58, I was expecting FG of 1.011 ish.

Roused the T-58 with a gentle stir and upped the temp to 19-20c yesterday :? …checked this morning, it’s off again dropped 4 points to 1.014 :D all being well should achieve the required FG shortly.
