Get advice on making beer from raw ingredients (malt, hops, water and yeast)

Aaargghh.....Help!

I've just run into a major problem with my plans to brew a Russian Imperial Stout tomorrow.....all my Maris Otter malt that I had saved for it is wet through (long story, but the short version involves building work!)

The problem is, I have an Irish Ale starter going at the moment, so want to use that - i.e. I still want to brew a Stout.

The other malt that I have on hand is:

3.5Kg Lager Malt
5Kg Wheat Malt
1Kg Amber Malt
1Kg Caramalt
1Kg Roast Barley
1Kg Black Malt
500G Crystal
500G Chocolate
1Kg Flaked Wheat

So.....what do you think?

Can I use the lager malt plus a couple of kilos of wheat malt to brew something similar?

Tragic waste! Bill the builder. Unless it's you. You can't bill yourself.

Give it a try mate, if you don't mind using the ingredients on it. At worst, it will not be a great pint. At best... you might invent a new beer style, or make something akin to belgian brewing weirdness.

Sadly, I'm the builder......so it's all my own fault!

I'm currently debating whether to spend the afternoon nipping over to the Hogs Back brewery for some Maris Otter, or whether to make the mystery lager/wheat stout!

the starter will be fine, there's no rush.

get onto barleybottom and he'll most likely have some malt with you PDQ. Or phone Patsy and tell her that you have no patience!

don't panic - but I wouldn't try a lager/wheat malt stout!

The missus has solved it. She says I'd better bugger off to Farnham so I can get the ingredients I really want (and who am I to argue?).

That also gives me a chance go to the HBS in Farnborough and see if I can get a better hydrometer, and another floating thermometer to replace the one I dropped. And maybe some more torrefied wheat.....and errr....maybe some other stuff too.

You could make a Schwarzbier with an British twist and call it "Alford SchwarzeKegger"

There IS a rush! I have to brew tomorrow. I just have to!

just getting soup and a sandwich down my neck, then I'll toddle off to the Hog's Back Brewery and a get a sack of MO. Which I will store INSIDE. Even if we have guests and it gets in their way.

The morale of this story is don't move your malt into a garage with a part exposed roof - even to accomodate others!

If you had more of the lager malt i would have said substitute it in instead of the MO since the base malt won't make a huge differnence to a stout, but you don't so i won't :D

I'm back from Tongham with a sack of Maris Otter, a couple more kilos of Crystal and 250G of Goldings hops.

Plus an assortment of nice lookig bottled beers from their brewery shop.

That the Imperial Stout back on the menu for tomorrow morning then.....

I love their brewery shop, I get quite excited and spend too much though. Were they brewing? I must have been there 7 or 8 times and I've never seen any real action going on...

They didn't appear to be brewing at the time. They were crushing malt though....which was useful for me :)

I also got them to give me some yeast, so I think a T.E.A. clone is on the cards this weekend once I get the stout knocked out.

Wonder how long the yeast will keep in my fridge in the little plastic bottle?

As for the brewery shop, it's wonderful. There must be around 300 beers there.

Ridgeway Foreign Export Stout
Hop Back Entire Stout
Ossett Treacle Stout
Dark Star Sunburst
Plus a couple more that I can't remember as they are all still in the car boot.

Where did they get the yeast from? a bucket? from the fridge? just wondered how they keep it between brews...

(according to Jim's pages on starters, bottled yeast will keep a few weeks at least in the fridge)
