Which one of you made me do TC with the 340g of honey?

For any alcoholic brew that doesn't fit into any of the above categories!

im sticking some into a mini cornie, then bottling the rest.

intending to keep some a good while to sample at a later date. either that or ill sup this lot and if its as nice as i recon ill make another batch and bottle all of it for a rainy day.

Thats what I tried :roll: :roll: a few mates helped me drink them after 2 weeks in the bottle so I made a 20ltr batch and kegged it :lol:

I really like this in the swing top bottles. You get a nice big POP then the neck smokes like a gunbarrel for a while when you open it.

How apt :D

I have plenty of Grolsch flip tops and I agree with you on the POP,crown caps just dont have that effect :lol:

Well mine's been going for a month now and it's still bubbling away.
A couple of weeks ago I racked it (as it appeared to have stopped) ready to bottle and it was at 1002. Then it started bubbling again. Laziness has kept it where it is, but it's still bubbling, about once a minute. Tonight it's getting bottled though. I'm going to prime the bottles with a little dash (very specific and exact scientific measurement) of pineapple juice. The taste I had when I racked it was bloody lovely. Hard to describe, nothing like a cider or a wine, very mellow. Hope it stays that way.

If the gravity is still at 1.002 and you are repriming with "a little dash" of Pineapple juice then keep them covered and in some kind of container as the gravity could drop below 1.000 and even as low as 0.995 :shock: .After a week carbonating at fermentation temp I would chill a bottle for a day then open to see if it has your desired carbonation level!
It is a very nice drink with lots of flavour (and a suprising amount of body) which I found remained until the keg was empty.

Cooo. Had a right busy brew night last night. Decanted the Wyeast Scottish I'd made up, washed thoooosands of bottles, checked on my Brewmaker Victorian Bitter (still going), made up a John Bull Masterclass Chocolate Stout, THEN decided to bottle this pineapple cyser.
Very tired by then so this was just a case of throwing it into some bottles. 16 small J20 glass bottles (275ml I think). I didn't even measure out my priming pineapple juice. Some bottles only got about 10ml, others about 30. Like I say, I was tired. I didn't even take another gravity reading. The last bit went into a small plastic Lucozade bottle so that I could keep a check on how it's fermenting.
One thing I did discover though when I checked back on my notes . . .
No wonder it was bubbling after being racked, I'd added 150ml of apple juice as a primer ready to bottle the following night! So last night as I was bottling I discovered that it now tastes more like a regular TC. Gone was that wonderful mellow taste.
So, do you think I should give my other half a ring and tell her to stand clear of the bottles that are in a box on the floor of the dining room?
Jeez I'm going to be in trouble :oops:

I would imagine that the initial primings you used when you racked would all be used up by now....but take care anyhow :lol: :lol:

I had an extra demi j last night, and 3 ltrs of apple and a 1lb of honey... so i went out and got some pineapple. with the addition of a little champers yeast we have some 12.5% cyser on the road to boozieness.
thants a hell yeah.

just thought it was time to see what you boyos were on about.

Sounds a real beauty this one! Justt one qusetion, is it best not to add the pineapple juice a day or so after the apple juice & honey, or could i just add all three together as long as there is room left for extra foaming?

I added all the ingredients together and it was ok.I have never had it foam madly as some people have.

Mine (I call it pooh beer) was foaming like mad. It died off so i racked it and now its very slow - should I top the dj up with sugar syrup, pineapple juice, or apple juice (I have "real" apple juice fermenting as cider I could chuck in)??? :?:

What recipe did you start with Mitchamitri? and have you taken a gravity reading?
Are you looking to add more sugars to up the strength or for priming?

Recipe from the top line of this thread….
“It was the 3l apple, 1l pineapple, 340g honey and champers yeast recipe from someone here... what a fun brew tro watch - like a lava lamp and a spent yeast layer an inch deep!”
But the apple juice is actually from my cider pressing apples.
Fool that I am I forgot to take a hydro reading – not looking to necessarily > alcohol, more concerned with flavour and using the full demijohn for efficiency.

Pour some of your pressed apple juice in the DJ, let it ferment out then bottle with a level teaspoon of sugar per bottle.
