Hi Guys.
Made Nut Brown Ale on Friday night, all went well and i cooled down my wort and read 1045. Started my ferment (s-o4 yeast) and Monday morning i read 1.010. This seems very quick to me. I have read that some people rack into another fermenter for a day or two before bottling, is this advisable? Can you tell i'm the new boy? :oops:
What reading should i bottle at?

I've never had S04 go that quick - some probably have though.

If you have a sterile, airlocked secondary fermenting vessel e.g.

....I'd rack it off into that at the weekend and let it clarify for a couple more weeks prior to fining (if you want to), priming and bottling.

If you haven't got one I'd bottle at the weekend straight from the FV with a little bit less sugar than recommended and go from there. It will be pretty bright anyway after a few weeks if you're using S04.

I've had some fairly quick ferments recently too. Must be the central heating knocking up the temp. Oh to have proper temp control!

I'm not a fan of secondary fermentation purely because I dont like to move the beer around too much for fear of oxidisation. I have a ten day rule; ten days in primary even if its fermented out in 3 days. This will help the main body of yeat clear up any impurities 'on the way down' The yeast charachter will also benefit. I understand the risks of leaving beer around in the FV after its stopped fermenting - it leaves you alot more prone to bacterial infection as you wont have the protective krausen or CO2 blanket.

Yep. Its in an airlocked fv and will go into another. Your beer looks good in there, what is it?
My yeast went nuts after about 4 hours. It lives in a room about 18 degrees.
First time i used s-04.

Make sure the 2ary vessel is air tight. The beer in that carbuoy was a dunkelweiss, which got infected with some nasties and turned to vinegar :( (poorly sterilised bottles methinks #-o )

I am very clean on brewdays and when bottling/kegging but i'm sure the beasties will get me one day.
