Yellowbelly Pale Ale

OK so technically it's not a BJCP 'pale ale' I don't care. It'll pass as a Pale Ale to uninformed house guests. :lol:

I want a bright sparkly pale coloured bitter for Xmas and so have left out all specialty grains (to keep the colour light, also 66° mash), and used the ale hop variety I think is the lightest and brightest in flavour - for me anyway. I couldn't bring myself to make a small 15min hop addition as so many tried and tested printed recipes have, because a) I have the hops available and b) bigger is better right???

25L, 3hr mash from 66°C (not 90mins only because kids football is gonna get in the way), 90 min boil, efficiency 85%, Water profile Dry Pale Ale, alkalinity 25 CaCO3

Looks nice Si.

Have you used WLP005 (Ringwood) before? I've just made two beers with it. It needs a good sized starter and lot of rousing to get it to attenuate but it's a lovely yeast. Very fruity.

Phil: Not used WLP005 before, but am happy to rouse (I'm committed now). How often are we talking, daily? I put the vial into 1L of 1.030, fermented that out and pitched the slurry via a 'DFS' today.

I got 26L @ 1.040 so bang on OG but a litre extra :D . 85% brewhouse eff, and 88% by volume :D Down to treating my water I reckon, gone from 75%.

I think twice daily rousing is recommended. I went with once a day for about 5 days.

It is a lazy little so and so WLP005, visibly settling out before its finished [-X Rousing is taking place.

Looks like it's slowing down.

The last one I brewed with this yeast (a few weeks ago) carried on dropping slowly for almost two weeks.

1.015 tonight. The head has died down to about half a centimetre. Rousing AM and PM, when I don't forget.
