3rd go at this on, last time was sooo good, I had to do it again, using different hops, I think Flytact posted this recipe, cheers

What does anyone think about a small addition of wheat, probably torrified,

is this dark enough?

what yeast should I go with? I've got WLP-023 Burton, S-04 and US-05, I wanted to use Nottingham to dry it out a little, but HBS still has none in.

I'd use either the Burton or the 04. The 05 is a great yeast. I use it all the time. I don't think it works well for English styles. It's too clean and very neutral.

How did this one work out in the end Garth, I'm thinking of doing a Deuchars IPA clone tomorrow.

Which yeast did you go with in the end ? I've got S-04, US-05 & Gervin.

Lived in Durham for 2 years Garth - lovely part of the world!

Used to drink many a pint of deuchars IPA - cant remember if that was in Durham (Half Moon, Colpitts (lived around the corner), Dun Cow) or maybe on several trips up to Edinburgh. Its also where i fell in love with Landlord as it was a regular on tap at the Half Moon.

Anyway, have my starter of wyeast 1187 ringwood going ready for a Saturday brewday when i will be finally having a go at this. I had also thought of a small torrified wheat addition. Did you end up using it and did you like the result? Was it dark enough or would you suggest a small addition of choc malt to increase it a touch?

Also have a 1275 starter going to have a crack at a Ruddles County.

Double english brew day and will be supping on my Landlord during the day. Life's tough for some :lol:

I made a batch of this based on correspondence between a scot that moved to America and the production director of Caledonian:

Its been conditioning for a week and still needs to clear, but its pretty close although not spot on. I might slightly increase the early hop amounts next time as it wasn't quite as dry as the real thing. Great aroma though.

Deuchars IPA (28L)

4900g Golden Promise
250g Wheat Malt

16g Aurora
16g Fuggles
20g Styrian Goldings (all 60 min boil)

26g Williamette
82g Styrian Goldings (15 min boil)

585g Brown Sugar

SO4

4.4% ABV, 27.5 IBU, Colour 9.3
BREWERY UNDER CONSTRUCTION

Tha's thrown me a bit Jake, I'm halfway through the sparge & wasn't going to add any Styrians (not even sure if I've got any)

My hopping schedule is:-

Copper
Fuggles & super styrians

Last 15 mins
Willamette

Last 5 mins
Fuggles & super styrians

And the old reliable S-04

sorry RTD, missed this yesterday, how did it go? did you do it?

Mine didn't work, and after discussions with people who have tasted it, we think it got a bit hot during the first stage of fermentation, it's still drinkable but has strange twang to it, I had this problem with about 6 or 7 batches early this year and all were made with liquid yeast, this batch of Deuchars was made with S-04. I reckon liquid yeast is less tolerable of higher temperatures, and I got unlucky with the dried.

No worries Garth, I posted the question at the last minute anyway.

Just finished this brew & used the hop schedule I posted above which is based on the one you posted at the start of the thread.

I've used S-04 too so I'll let you know how it works out - it looks like Deuchars at least (draught version) :=P

The hops tasted good but they were overshadowed by this 'orrible twang

Yours sounds good, it's a cracking brew.

Nice one M, I'm keeping my fingers crossed. I reckon it'll be a decent pint whether it tastes like Deuchars or not
