Overnight mash fell to around 63C when i opened the mash tun up this morning.
Sparging as already taken place and its now in the boiler just getting upto temp.
3250g Pale Malt
30g Cascade 90mins
30g Cascade 15mins
45g Cascade 0mins
The original recipe was for 4kg Pale malt
but i wanted it at a lower ABV so cut it down.
Better go check on the boiler.

Boiler just started at 9.05, first lot of hops in.
Wort in jug for yeast down to 22C so yeast added.
Time to do some work.

All done now.
Even cleaned up,rinsed everything and just finished my dinner,
sat here with a brew chilling for 10 mins.
I actually cut the boil time down, as i got an e-mail back off
Youngs Brew about the AA% of my Cascades and they were higher
than i had planned, 7.1% he said, i only calculated for 6%
so had to change it pretty quick as the first lot of hops were already
in when i got the e-mail, i amended to this.
30g Cascade @ 60mins = 22.23IBU
30g Cascade @ 15mins = 11.11IBU
45g Cascade @ 0mins = 00.00 IBU
total came to BU:GU Ratio 1.02
So fairly damn close, but when i had time to sit down and work it properly
i should have only put 25g Cascade @ 15mins
and 50g could have gone in at 0mins
giving it BU:GU Ratio 0.96
theres not a lot in it though, just hope the hops overpower the bitterness.
OG was 1032 with 24ltrs in the FV so not bad as the target was
OG1033 for 23 ltrs.
Efficencey was just up a bit to but i think the overnight mash may have done that.
I`m usually around 73% to 76% Eff but this was 79% Eff.
Oh hang on a mo i forgot to change brewlength from 23 to 24ltrs.
A quick rework suggests what i did gives a BU:GU Ratio of 0.97
Ah thats a bit better, but i guess youre not gonna notice the odd 0.5 anyway.

Just looked in on it and its fermenting like a bugger, a nice 3/4" head of yeast on the top and the airlock is going crackers.

I hope this one tastes better for you. I managed to hold off drinking my last 2L pet for nearly 2 months but just couldnt resist it. So ive only got 1 500ml bottle left which is in my collection of brews ive made. Its gonna be one hell of a pi55ed up day going through something like 15 or 16 different beers. Could be more than that. Ive lost count with how many there is. I'll have to start at breakfast on that day.

I did use to wonder a bit about the massive raving about cascade, but my single hop IPA (in my sig, Harry's IPA) uses cascade and after 4 weeks in the bottle the flavours are really developing - cascade is rapidly becoming a favourite!

The early signs are good though, its just about fermented, i drained a bit off last night to test
with the hydrometer and had to have a sneaky taste, well impressed even at this early stage.
Its down to SG 1012 so just gonna leave it until Saturday and bottle some and keg the rest
as the airlock hasn`t bubbled for quite a long time now so think its just about there.
I would have done it today but got a lot on and its Mad Friday so i`ll be out early as well.
Probably wont be in any fit state to even look at beer tomorrow but i`ll get it done,also got
a brew planned as well, last one before Xmas, not sure what to brew yet as my Styrians
havn`t turned up and wont be here, so something with First Gold i think.
Maybe a Bath Special Ale.

Just had another sneaky taste and whilst the taste is good, it`s got a smell of vinegar,
so i`ve gone from one as TCP and now one going to vinegar, i cant believe it.

Stop dipping into the FV. Only do it when necessary ie taking a reading. You dont know whats dropping off your arm into the brew. You might be contaminating it. Just be bloody patient.
