Goldfinger - EKG Single Hop 15/12/08

Today's excuse for brewing was that I had a new refractometer to test, and have also just about completed my first tmeperature controlled fermenting chamber....

I went for a single hop brew using East Kent Goldings to try and use up a load I bought from my local brewery. At £12 a kilo, it's easy to overbuy!!!!

Once again, I've used the Gurgeh hop schedule - 1/2 the IBU from First Wort Hops and the other half from a 15 min addition, then a nice whack for aroma at the end of the boil.

Grain bill. Maris, Amber and Wheat. I had no Crystal, but I reckon 150g of Amber will be nice and fairly subtle. Wheat for head retention - using wheat malt instead of torrefied seems to work better for me.

On the go. This temp reading is a bit misleading as it clicked down to 67C just after I took the picture. I ended up with a 2 hour mash as I had to go out unexpectedly. Mash temp was flickering between 65/66 when I got back.

Here's my set up. The fermentation chamber is right hand side - the door isn't finished yet though, it's currently a slab of 2" Kingspan insulation and a sheet of ply, but no hinge yet... Big enough for 2 10Gal FVs.

Tools of the trade! The refractometer and the hydrometer agreed with each other closely, so I'm happy. It's ,uch easier to use the refractometer during a boil to check gravity than to have to draw off a hydro sample and cool it.

My closed system for running off. This way, if the run off is slow I can just leave it to go for as long as it takes without worrying about infection. Today it was like a racehorse pissing though! I gave it a whirlpool stir, then left it for 30 mins to settle before opening the valve.

Original gravity 1049 - so I've gone from a little under, to a little over. I ended up collected about 22.5l versus my target of 23, so close enough - I could have diluted it with an extra 0.5l and it would have been closer, but that was good enough for me.

Aerated within an inch of it's miserable life. Added about half a level teaspoon of Brupaks yeast nutrient and pitched a packet of hydrated SO4

And finally, tucked up inside it's new bedroom. Temperature sensor taped to the FV and set to 20C for now. I might drop it down to 18C to get a cleaner ferment, although 20C is smack in the middle of the S04 range, so I might just leave it....

Anyway - that all went really smoothly. No problems at all. I love it when a plan comes together.

For some reason, I always seem to get pretty clear Worts. Must be the ley lines round here or something - I just use the H&G hop strainer (we have a love/hate relationship), protafloc at 10 mins and then let the wort sit and settle for 30 mins when it gets down to about 25C. Seems to work well.

My work has a "non-essential travel ban" at the moment, so I've got some time at home..I'm meant to be working, but I can do that just as well from the garage as from the office! Laptops and cellphones can be wonderful things.

BTW....I notice a sneaky "Galaxy IPA" at the bottom of your sig.....have you been getting more hops from Mr. Kenrick recently? If so, what do you think? My Galaxy IPA smells and tastes wonderful so far. Went into the keg on Saturday and I'm trying to leave it 'till after Christmas! It took until nearly the end of primary fermentation for the passionfruit flavours to develop.

I was going to send you one of those in return for the Nelson-Sauvin......but if you've got one on the go, it might have to be the Winter Sun IIPA instead....

I'm doing my best to build up supplies..the problem is that I must have a serious issue with my cornies or my temperature control as the beer just keeps "evaporating"....

Do you not find you need to weigh down the top of the bubbler?
I use the same fermenters and always find I have to weight them down to stop the top getting pushed up and down.

I don't weigh the bubbler tops down - I want them to rise up and down and let the excess CO2 out as the beer ferments!

With the regular small bubbler airlocks, I used to have problems sometimes with the CO2 blowing the top part completely off, but I've never had a problem with these big ones.

Hi adm, I've had the Galaxy a while, just waiting to put them to good use, I'm waiting of another order from Ross at the moment, I saw you'd done one but couldn't see your recipe anywhere, and although I have a good 60 AGs under my belt I haven't really done my own recipes, I like tried and tested ones, but that is slowly changing, so I went with fairly standard Pale, crystal and torriefied to 1054 (Same as the N.Sauvin), then hopped it with Perle for bittering to 15 IBU, then the Galaxy split 45g/45g between 15 mins (17 IBU) and switch off, I've used US-05 again for a clean crisp finish. I agree the smell from the boil and the fv is lovely, so we shall see......let me know how yours turns out.

I have Simcoe waiting for some Cascade and Amarillo to go with it, Ross's site says they go very well together

I did mine with 5Kg of Maris (pretty much my standard base), plus 0.5kg Crystal (probably too much) and 150g Wheat malt. Galaxy to 39 IBU and also US05. They should come out as similarish beers! Maybe.

I've got this lot on order from Ross, so there's going to be a few "experimentals" in the New year:

that's a good mix of hops there, one of my recent beers used Pacific Gem, it's a good hop but I wouldn't use it on it's own again, it gives a very woody with slight fruit taste, but I think would be better mixed with something else.

I love the hops you get from Ross, both pellets and flowers are so sticky and resiny, with loads of aroma coming out of the packet, top quality

I had the following in a mail from Ross yesterday. I'm sure he won't mind me posting it here:

"The hop situation has me amazed - we sell so many hops now around the world & often ones that should be available as fresh & cheaper locally (we do a huge business in USA hops to the USA). However, it appears worldwide that some brew shops really don't give a damn to supplying the best product they can & especially when it comes to AG, prefering just to push kits. It's certainly opened up a niche market for us & having the largest, freshest selection of hops in the world certainly helps."

Can't argue with that. And his packs of hops average £3.70 delivered if you buy a decent amount ! Which is cheaper than H&G and on a par with Barley Bottom, so I'm buying Fuggles and Goldings from my local brewery, UK/European ones from Paul and New World ones from Ross.
