Guinness Foreign Export - 28/12/2008

Did this yesterday:

Brewlength: 19L
Efficiency: 70%
Target OG: 1073

Mash: 90 mins at 67C

Marris Otter: 4900g
Flaked Barley: 1500g
Roast Barley: 450g

Hops: 65 IBUs

Northdown (7.9%) (90 mins): 30g
EKGs (4.6%) (90 mins): 50g

Yeast: Safale-04

Turned out a bit of a disaster with the element on my boiler packing in half way through the boil. Hopefully I've still got a decent stout. In the end I got 21.5 litres @ 1062 with less bitterness than I intended (BU:GU ration of 0.7 as opposed to intended 0.9).

Anyway its fermenting vigorously at the moment with two packets of Safale-04. The airlock is bubbling permanently - haven't had that before, usually there's a gap between bursts!

good job Jymbo, must have a go at that myself, I'm rather partial to a bottle or two of FES now and again

watch for overspills when fermenting, I find anything with Black or Roast in it requires wiping of benches and floors down....

Just had to clean out the airlock, the head's hit the top of my 30L FV and there's only 21.5L of wort! Will have to keep an eye on this one.

Just read this. It seems the element might be OK after all - it's just no good for high gravity worts. It did start working again after a while but I just assumed that it was an intermittent fault.

Down from 1062 to 1020 in less than two days! But definitely lacking enough bitterness.

Advice Required!!
Was going to brew a Guinness clone tomorrow, checked my stock and I've only got around 100g of flaked barley, can I substitute or use anything else?

3.5kg of Pale, 1kg Flaked and 500g Roast for a 23litre batch. using the ratio 7:2:1

Any of the Guinness clones that I've seen contain considerably more than 100g of Flaked Barley. One recipe from this forum states:

70% pale malt
20% flaked barley
10% roasted barley

That'd be 3.5Kg, 1Kg and 500g by my reckoning.

What about some rolled oats or flaked wheat?

It's more or less finished now at about 1015. There's a bit of bitterness coming through so it will probably taste OK, if not exactly like an FES. I'm not inclined to tamper with it at this stage - I reckon I've got a gravity/bitterness ratio of around 0.65-0.7 which is still in the ballpark for a strong stout so I'll bottle it and leave it for a while.

On a more serious note I'll have to look at getting a better boiler. Might have a go at making one myself- I fancy one of the shiny nordic optical stock pot type.

Thanks, flytact - I'll maybe try that next time. That's a nice setup you have there - I wouldn't mind moving to a gas boiler although the Irish weather might put the dampers on that!

I bottled my FES last night and it tasted pretty good - could have used a bit more bitterness, but it had a nice roasty flavour all the same and a discernable level of bitterness. I'll try to give it a couple of weeks before tasting it again.
