A couple of kit questions

Hi,

I started my first ever kit off on Boxing Day, Woodfordes Wherry, I bottled half of it and put the rest in a pressure barrel on New Years day after the specific gravity had dropped to a consistent 1010 for the previous three days.

The fermentation was carried out in a room with a steady temeprature of between 18-20C. Following Woodfordes instructions to the letter I left the bottels and barrel in the warm room for 2 more days then moved it to a cooler room, however the cooler room is 8C at night and only 12C in the day. I intend to leave it there for two weeks minimum.

I know most bacteria don't work under 5C so is this room too cool?
Can you use honey instead of sugar at the conditioning stage?
Next I want to make something blonder and more hoppy should I go for Great Eastern Railway or Admiral's Reserve?
If I wanted to "hop it up" anymore could I use hops in a nylon mesh bag, if so how would you do that?

I'm loving this home brewing lark the tinker factor is huge but I'm not one for patience so this is really hard for me, any help on the above?

I would recommend the Admiral's Reserve. It's more hoppy and a better taste IMO than Wherry. They even supply a packet of dry hop powder in the kit.

Lillywhite and Chris thanks so much for your informative and quick responses. I'll take your advice, I'll keep conditioning for three weeks minimum to account for the cold. This room could be an asset come summer as it never gets warm, no ghostly presence just an old cold house. I'll combat that cold with a kit of Admiral's Revenge as suggested. Good stuff.
