hogs back rip snorter

just been fiddling with this recipe in beer smith,from the almanac

it is not producing the right colour with the chocolate malt at this quantity, the colour indicator shows black??? with estimated colour of 69.7
510 gms seems alot.
has anyone done this clone, are the quantities correct

Hogs Back Brewery RIP 5 gallon batch OG 1052 ABV 5%

PALE MALT 3240 gms
CRYSTAL MALT 1590 gms
CHOCOLATE MALT 510 gms

HOPS 90 minute boil no ebu given so 32 EBU

FUGGLES 66 gms

Add 20gms GOLDINGS last 15 minutes.

1590Gms Crystal is also a hell of a lot, it only takes a few hundred grammes to get to Tetleys / John Smiths bitter sort of colour.

The almanac does specify the malts as:

60% Pipkin pale
30% Crystal
10% Chocolate

but I agree that this seems like an awful lot of Crystal

Without even adding the chocolate malt the colour goes black with 1590g of crystal in Beersmith. I'm not sure what colour the actual beer is as I've never seen it but I'm sure there's something amiss in the recipe by the looks.

it is a shade darker than 'old speckeled hen' ruby colour, iirc has been a couple of years since i had one

That sounds like a Hog's Back recipe. Pretty much the only ingredients they use are Pale, Crystal and Chocolate malts. Plus Fuggles and Goldings hops.

They seem to do OK with them though :D

Even so - 1.5kg of crystal seems like way too much.

just got back from the hogs back brewery and i was able to talk to the guy that brews hop garden gold and rip snorter
he told me it is 2-3% chocolate malt and 6% crystal malt so this is what i have come up with

5.30 kg Pale Malt (2 Row) UK (5.9 EBC) Grain 91.4 %
0.35 kg Caramel/Crystal Malt - 80L (157.6 EBC) Grain 6.0 %
0.15 kg Chocolate Malt (800.0 EBC) Grain 2.6 %
59.45 gm Fuggles [4.50%] (90 min) Hops 31.4 IBU
18.01 gm Goldings, East Kent [5.00%] (15 min) Hops 4.9 IBU

i upped the pale slightly to get the 5% abv, the same as RIP.
how does this look?

might give it a go, will have to get some chocolate malt as the brewery had run out

Personal I would not risk your beersmith amount of crystal. But your 2nd recipe looks good to me.

from the horses mouth and the colour looks right now.
what made me laugh was that he had his notes scribbled on a piece of paper, not very high tech..

can we get the almanac updated or do they get tested first?

I think I got the last of it on Tuesday. They had to go and check then to see if they had any left.

I feel a synergy with this thread!

I grew up in Rushden (where Bramswell lists location as - and was there over Xmas visiting family) and yet I now live about 1.5 miles away from the Hogs Back Brewery in Surrey :lol:

i grew up in Godalming and was visiting family at xmas...lol

its worth me driving all the way from Rushden to get my ingredients as it works out cheaper than going to my LHBS
todays purchase
16 kgs pale malt (only wanted 9 kgs but the guy couldnt be bothered to weigh out and said he would only charge for 9 kgs....result)
2 kgs crystal
250 gms fuggles
250 rms golding
for a grand total of £17.10

@ Andy - are there any small brewerys in my area, i know of Frog island brewery, but never been there. only been here 8 years and not realy looked that hard until now.
