Chocolate Orange

Post by tomU » Mon Jan 12, 2009 5:12 pm

I'm planning to get a good chocolate orange beer recipe sorted before easter. The idea is basically a rich chocolatey stout with something to give it orangeyness. My ideas are:

- Hop heavily with amarillo - I have got a good orange note from it before but I'm not sure it would stand out enough in a stout?

- Add curacao orange peel (or ordinary orange peel) - not really sure about quantities as again it needs to stand up against the roast grain. I want a bigger orange hit than you'd get in witbiers I've tried with curacau OP.

- Orange essence/flavouring - probably the easiest, but I'm not sure about using it in a beer.

I'm most keen on using amarillo - It stands up to my self imposed reinheitsgebot :? , but I am willing to break this for a special occasion...

Any thoughts?

Cheers

Some of the flavours of my latest IPA reminded me of both chocolate and tangerine during a tasting I had over the weekend it was hopped with first gold and target. The chocolate taste wasn't like a bar of chocolate but was a subtle smooth 'something' that reminded me of chocolate somehow. But first gold def reminds me of tangerine!

+1 for first gold hop for orangeyness.

First gold for the marmaladey orangyness. And if you add enough as late hops you get a certain buttery viscosity too, from the hop oils.
