St.Peters Ruby Ale
Hi This is my first recipe post.
I tried to make a clone of this as i really enjoy it.
For 23l
4000 MO
200 Crystal Malt
100 Choc Malt
30 Goldings 90
30 Goldings 15
S-04
It came out pretty well if anyone fancies a go. Has anyone else got any suggestions to get it closer or has anyone got their own clone?

I'm pretty new to it myself but....
I had just got my H&G mash tun and i heated it up with a few pints of kettle water while i heated up 19l of water in my Burco with half a campden tab. Weighed out the grain (to the recipe above). Poured the warming water out and added the grain to the mash tun followed by the water at 72 degrees. Stirred it to a sloppy porridge consistency checking the temperature all the time. When it hit 66 the lid went on and the timer started for 90 mins. Kept 14 l of water in the burco with 1/3 of a campden tab for a batch sparge. Started to run some wort into a jug and put it back into the tun and after a few litres it was running clearer so ran it into a fermenting bucket. Then in with the sparge water (68 degrees as the heat of the grain is already okay) and lid on for 15 mins. Same as before and when its running clearer, into the fermenter with it. I got 26 litres of wort at this stage. My burco being 23 litres means i split my boil between this and a large pan. About 2/3 to 1/3 and get them up to boiling. In with 40g Goldings (split roughly) and after 75 mins same hops again and a teaspoon of irish moss (split roughly). At 90 mins Turned off and left for 15 mins before pouring all through a sanitised sieve into a fermenting bucket and into a cold bath with a lid and airlock. Thats how i have to cool at the moment. Pitched S-04 yeast the following morning at 20 degrees. Bottled after about 8 days with a 1/2 teaspoon of sugar per bottle. A month later it was ruby red, effervesant, crystal clear, had body and head, tasted great and i was delighted. It was my 3rd or 4th AG and i am planning to make it again.
Hope that inspires you. I got set up for about 100 quid, but i have made about 7 40 pint batches now and am already quids in and supping great beer and making it is very enjoyable, especially when you sit down and crack open one of your own.

I have had this ale twice but both times i was rather put off, you see i would have a sip then at first it was ok but then it was overwhelmed by a gritty taste.
I reckon this may just be a dodgy batch though so i will try it once more just to be sure.

I saw it in Asda the other day and one of the bottles was near empty with a dodgy cap and the rest ot the box of 12 was covered in white furry mould where it had leaked or burst..... so i went for speckled hen instead.
'Tis a fine brew though IMO.

Thought at first some chav had supped it and put it back, you know like when you find some chicken bones rammed in a gap in the cereal aisle and stuff.... or is that just ooop north?

I also bought some from Asda 3 for 4 deal ,they also had St Peters IPA on the same shelf but when I got to the till they said it was put there by mistake and wouldn't let me have it for 3 for 4 , so I changed it for St Peters organic ale.Any ideas for that brew because that was even better than Ruby ale.

No idea whats in those too though, i will have a look.

I ahev just racked up and used all St Peters Bottles, Its looks mighty fine, However for some reason after the 5 or 6th bottle I have like flash backs from a former life, I feel Like I am in the centre of London just down from Sweeney Todd the barber and some Quack has just sold me some ultimate health Elixir in an old medicine bottle. and I find that I am drinking it.
I really shouldnt be drinking on these pain killers I am on.

I massively rate all St Peter's beers, but thier Organic Ale is theier best, IMO. Got an IPA and Ruby Red in the cellar, am looking forward to them. And yeah, great bottles, too!!
