Help needed formulating a recipe

Hi,

I've just found out I'm gonna be able to brew on Thursday but I haven't had time to work out a recipe (or get one of those brewing programs) and won't be able to get to the HBS between now and then.
Could one of you wonderful people please help me out - I've got the below in stock and would like a session beer - my efficiency the first time was around 70% and I'd like something around 3 1/2% ABV but this time using the crystal as the head drops quicker than Cristiano Ronaldo in Middlesbrough's penalty box:

20 kg Belgian Pale Ale Malt
1 kg crystal malt

60g Fuggles 4.11%
73g Challenger 5.7%
52g Styrian 2.9%

I was thinking of 3 to 3 1/2 kg of pale with a couple of hundred grammes of crystal but haven't got a clue how to calculate the IBU.

3.83 kg Pale Malt, (5.9 EBC) Grain 89.5 %
0.45 kg Caramel/Crystal Malt - 40L (78.8 EBC) Grain 10.5 %

hops
56.70 gm Fuggles [4.11%] (55 min) Hops 28.7 IBU
28.35 gm Styrian Goldings [2.90%] (5 min) Hops 3.5 IBU

28.5 IBU
Estimated Alcohol by Volume: 3.6 %
Estimated Color: 14.9 EBC

Single Infusion, Full Body Mash, 70'c
60 min boil or 90min boil with 1st copper hops @ 90mins brings the IBU's to 31

EDIT - changed the AA and IBU to mach what you posted

How many IBU are you looking for Paul?

If you did:

3.8 Kg Pale
250 g Crystal

For 23l (using my setup and 75% efficiency), you'd get around 3.7% ABV

For the hops, if you did:

Challenger 30g First Wort
Fuggles 40g 15 minute addition
Fuggles 20g 1 min from end

You should get about 28 IBU.

If you bunged in an additional 20g of the Challenger at 15 mins, and the remaining 23g at 1 min, you'd be up around 35 IBU or so.

(IBUs calculated by Beer Alchemy using the AA% you listed below)

Thanks for the help fellas. I'm good to go now, its gonna be a quicky on Thursday as I've got to be out of the house by 12.30 so the liquor will be heating up from about 6:00 in the morning and hopefully I'll be pitching by 12.00 ish.

I think I'll go for the go for adm's recipe as I reckon I'll be able to hit the 75% efficiency this time round - I didn't leave the sparge water long enough before the run off to dissolve the sugars last time round.

I'm also gonna up the water volume by a couple of litres in the hope of getting the full 23 and not the 21 I managed previously.

I'll let you know how it goes...

Paul, for future reference if you have the AA content for your hops you can work out the IBUs (and the target OG) using this.

Colour is 45.4 EBC

O.G 1054 ------ABV 5.8 APPROX

This brew is a cracker if you like a malty, lightly hopped brew. Tried & tested by the Hillbilly.
