Thinking of doing a Headcracker soon, but the though of only 24 pints in a keg seems a waste of space. SO....
How about using two packs and making up to 40 pints instead of the 48? Now this would increase the alcohol content a lttle and I was wondering about using a different yeast than the stuff that comes with the kit, say safebrew 33 for example. What do you reckon?

aye, that would work, in fact there was someone either on here or another forum who has done that,

IIRC most of the standard dry yeasts eg S-04, Nottingham etc can get up to 12% or thereabouts

S-33 goes well at 7.5% and can go up to 11.5% (according to the spec anyway), hence why choosing that. Not so sure about the standard packet yeaset or S-04 as the specs I found don't state alcohol tollerance.
