Backfire Pale Ale

I'm looking at doing this new recipe which I'm calling Backfire Pale Ale.

I'm upgrading my setup this weekend from 5 to 10 gallon so this brew day is dependant on that happening.


Anyway here's my recipe -

Boil Size: 52.06 L
Boil Time: 60 min

5000.00 gm Pale Malt, Maris Otter (5.9 EBC) Grain 55.56 %
3000.00 gm Pilsner (2 Row) UK (2.0 EBC) Grain 33.33 %
500.00 gm Caramel/Crystal Malt - 60L (60 EBC) Grain 5.56 %
500.00 gm Wheat, Torrified (3.3 EBC) Grain 5.56 %

90.00 gm Fuggles [4.70 %] (60 min) Hops 21.2 IBU
60.00 gm Styrian Goldings [4.40 %] (60 min) Hops 13.2 IBU

60.00 gm Williamette [6.60 %] (30 min) (Aroma Hop-Steep)

2 Pkgs US05



Beer Profile

Est Original Gravity: 1.046 SG
Measured Original Gravity: 1.010 SG
Estimated Alcohol by Vol: 4.45 %
Bitterness: 34.4 IBU
Est Color: 10.4 EBC

So, any suggestions or comments?

That's gonna have a great aroma from those Wilmette Steve,

You only got you 2kg of the Lager malt mind....did you have some already?

Nope, I don't have any more lager malt, I cocked up :oops:

I've since re-done the recipe and it's completely different.

I think I'll hold back on posting a recipe 'till I'm more certain of what i'm making :?

I've been trying to ring the H+G to double check they have the 10 gallon fv in but they've been engaged for a while now :roll: Without that I can't get going.

When I was in yesterday they were incredibly busy, and there was four of them legging it about, Patsy was saying it usually calms down after Chrimbo but it was going nuts. They had a whole pallet of coolboxes in the front shop, didn't see any fv's though

I'll be down there tomorrow collecting my gas up if you want me to pick up a fv for you.

A very kind offer, Garth, but I do like to rummage about in the shop, besides, when I'm in there I always find something else to buy :wink:

I'll be in around 10ish so I might bump into you if your in then.

EDIT - I'm supping the second of the Galaxy you gave me. It's well chilled ~5C but you won't believe how nice it is after running all the way from the kids nursery back home (about 2 miles) :shock:

I think I'm starting to get fit, must have a tab to sort that :wink:

EDIT 2 :roll: I got through to them, they have them in stock and John is fitting an orange dial style tap for me.

no probs, I might have a look down at that time, I've got another day off :-s it's dangerous as hell being let loose in that shop with a debit card when you've just been paid. :shock:

I'll be wanting to get the gas as soon as possible so I can bottle some of the Five Brewer, I need three cornies for the one you had a smell of in the kitchen.

I gave a bottle of the Nelson to John last time I brewed it, I've never done that before and was dubious about what he would say about it. I'll not say what he said on here, but needless to say I had to open both the shop doors to get out....... :oops:

Yikes :shock: Do tell, what did he say? I assume it was praise given the few beers I've sampled from you :) Self sensor yourself if it was bad news :wink:

I'm aiming for a fairly strong pale ale with a (very) dry finish. Hopefully the T+L won't "ciderise" it out of all proportion.

This is my first real run on my newly sorted H+G 10 gallon boiler. I've fitted two elements and an orange screw in type tap. I'm going to use it as a mash tun as well as a boiler, just as I did with my original 5 gallon setup. It seems to have quite a lot of dead space - 2 litres - but I can cope with that.

Anyway, I'll try and take some pics - worts 'an all - of the proceedings.

Kick off, about noon, no rush, bacon butties and lots of tea first :wink:

I popped into the Farnborough HBS today and walked out with over £60 worth of stuff (including a £30 sack of Warminster lager malt, Saaz, Hersbrucker, yeasties, chems etc...), then stopped at the nearby brewery in Tongham and dropped another £30+ there including a sack of Maris Otter and some rather nice bottled Belgian beers.

Which reminds me.....once I've polished off this pint of Stout, I've got an Orval and a Goose Island Pale Ale which are on tonight's schedule...

Almost ready to begin. Just finishing cleaning up.

My setup has had to alter due to the change in boiler size.

I've had to use my old MT/boiler as a boiler while the new 10g boiler mashes, once thats done I'll batch sparge with around 6 gallons (from my old MT/boiler). Due to the amount of wort I'll be collecting I'm having to do a ballancing act with a boiler perched atop a chair ontop of our dishwasher (queue fawlty towers jokes :wink: ) while filling two fv's as collectors which will then transfer back to the boiler :-k .

Anyway, I'll take pics so you can see for yourself.

Right, mash on as of 2:15. Mashing @ 67/68C. Hops etc weighed and ready just got to sit tight for an hour or 90 mins, I can't decide :roll:

Those hops smell lovely even before they go in - The fuggles smell slightly minty, the styrians even stronger and the willametta are stronger still :D I'm looking forward to trying this in a few weeks =P~

All done, I seem to have overshot my estimated OG. I should have got an OG of 1050 ish but i've ended up with 1057 :roll: This is probably down to not having enough wort post boil as I stupidly forgot to mark gradients on the boiler. Ah well.

I've split the batch into two, one has been pitched with us05 the other Danstar Windsor, just to see the difference.

Off out now with the missus for a couple of drinks. 8)

EDIT - The OG has decided it's 1047 so god knows where I got the other figure from :roll:
