The aim was to always have a stash and give it time to condition properly.... however :-) I might just start it up and have lager when I dont quite fancy a stout... Souns like a plan :)

Alreet lads, Well my Coopers Stout (Ditch's Stout) has been in the pressure barrel for 2 weeks now ! I had a sneaky try when syphoning from the FV to the barrel and also a sneaky taste after a week in the barrel, after a week in the barrel I was dissapointed that there was no fizz at all :shock: and that was after adding 80gms of sugar to the barrel whilst syphoning from the FV and a week with a heating belt on the barrel to aid the 2ndry fermentation ! And yet it is still FLAT :cry: After the 1st week in the barrel the stout did not taste that great (too early me thinks) so I left it for another week ! And I have just tasted it on Sunday gone and it tasted completely different than the week before :shock: and I should say it was bloody marvellous :D ! But then I have just tried another pint tonight (after a squirt of Co2) from my hambleton bard cylinder and it does not tatse as good as the pint I had on Sunday :?: I am not sure if the introduction of Co2 is affecting the stout in anyway (flavour wise) I dont think it would make any difference at all ! But it still tastes better than other stout kits I have tried and it still does NOT have that home brew TWANG about it :shock: so all is well on the Coopers Stout front ! Going to set my 2nd one away this week (before the 1st one runs out :wink: ) Will add a bit more sugar for the 2ndry fermentation this time and see if I can get a bit of fizz in the next batch !

PS ! Its bloody good stuff ! it sticks to the side of the glass like a good red wine ! mmmmmhhhhh Coopers Stout (Ditch's Stout) =D>

DC; Maybe something's getting lost in the translation here, mate? But, why would ye want " Fizzy " stout?

If ~ IF ~ I'm reading ye right; Would ye not do better with bottling the stuff? Only, the very reason I prefer to keg my brews is that I find bottled beers too " Fizzy " :|

dc, i reckon you might have a tiny leak on your keg. bottled is perfect.

and ditch, its not so much fizz, more like creamy. you know how some canned beers have a widget to try and recreate the taste and feel
of a draught pint? well i think a little bit of carbonation does this to the home brewed coopers stout.

ye know your gonna try it now dont you? :D

ye i read that one too.

im not sure about this over carbonation as its not something ive come up against yet. not even with the edme lager that i made a small error with a while back.
i put 240 grams of sugar into bottles for priming instead of 80 and the lager has turned out ok. not massively fizzy, but it does hold the head to the bottom of the glass. might be because im drinking it well chilled[the beer...then me].

but i put 80g of glucose dissolved and nuked in about a half pint of the stout, then gently stirred back into the fv before bottling. lovely.
only thing i might do different next time is, after reading on the coopers website, is use dsm . :D

OMG! Ye weren't?! :shock: Sorry. I'd missed that.

Listen; If it's " Creamy " ye seeking, rather than " Liquid Razors "? DSM is what'll Give ye " Creamy ". That's why I use it! :D

ditch i used a mix of light and dark dsm to try and replicate your medium dsm for the first ferment.

i meant i would use dsm for priming me bottles instead of glucose next time..

:-k Interesting concept, mate! Wouldn't really know what to say about that idea. Only that DSM is said to contain 'Less Fermentables', so god alone knows what amount ye should be using?

Again; I've really no idea what effect Any given amount might have in a bottle. Don't use bottles at all myself, see?

But, as ever; You crack on and let us know what ye think of the results there. This is how we hope to learn new things, after all ;)

well those friends never came over ...looooong stoooory....so i decided to restrain myself only drink the excess bottles as the rest was in a cornie.
to make this a little easy'er i moved it out to the shed ( out of sight out of mind ) so i had to finish all remaining beer/tc before i could attack ditches stout.
its nearly 01:00 on 27.03.09 i have just had the final pint of this fantastic kit and must say the guinness people must be crapping their pants if this is what a home brew kit can produce .the flavours and very texture of this drink (if left to mature yes ditch / embalmer i am talking to you ) is far and above anything they or any other stout produced that i have ever tasted and i have had a few in my 50 plus years.
so in conclusion after several beers and a couple of extra large single malts ........ drum roll ....... yes i think i'll make this one again

Had a great time reading all the above, even had tears in my eye's picturing some of the scenes of exploding FV's.
I have just half bottled and half kegged my first Coopers Stout, had a little taste and it was good.
I've read a couple of times about 80g of sugar for priming but according to coopers instructions it says 8g per ltr which equals 160g.
Now I've had a couple or two at this point and I'm not sure if its me missing something, but are we saying only put half the recommended sugar in (I know Sir Ditch doesn't use any, and I may give this a try one day) or have my sums gone AWAL?

rik i`d happily put 160g into a lager but i used 80g in my stout and it was fine.
if youre bottling, why not do a few of both for comparisons sake?
