I like honey beer as well, so I've got a 'summer ale' kit that I made up with honey (900 gms ish) and a bit of beer enhancer (250 gms) that is just coming to the end of it's ferment and which I intend to bottle on Sunday. I've just tested the gravity which is currently 1014 (it started at 1042) and I have had a little taste to see what's happened to the honey. I'm a (little) bit disappointed because, although I still think it will turn out to be a cracker, there is no real honey taste at all.

On the other hand I also like 'ginger' beer (anyone tried the Beartown Ginger Beer?). So I had a bit of an experiment with ginger to try to make one myself'. I used about 500 gms of grated root ginger (cost abot £1:50 from Morrisons) boiled it for 45 mins, used the resulting fluid to make up a Muntons wheat beer kit with and wrapped the remnants of the ginger in muslin and steeped the lot in the fermenter with the fermenting beer. This has a definite taste of ginger. It's not very strong (3.6%) but I think it will be great on a hot summers afternoon in the garden (that's if we have a summer this year). It is currently maturing, if anyones interested i'll let you know what it's like when it's ready in another three weeks.

Getting back to the honey. I read elsewhere, on this or some other site, that you need to pasturise your honey before using it to make beer as it comes natural with all the accompanying bacteria etc that could grow in your fermenter once they are no longer prevented from doing so by the concentrated sugar in the honey. To pasturise the honey you need to heat it to 80 degrees C for thirty mins apparently. I did this in the oven (and then burnt my hand on the jug, like a pillock :) ).

well. thankyou. the arm situation-i was rather vigourous...whoops...

i bottled it today, was down to about 1016, dont know what it was initially but thats come down from 1020 since the arm stir and its 11 days today so i thought it was now or never! i primed half the bottles with new zealand organic honey (unpasteurised!!!) and the other half with sugar... i guessed at 3ml of honey in each 500ml bottle compared to half a teaspoon of sugar in the others... without any sugar or honey, half a pint of it tasted quite nice this afternoon and i havent had the trots yet!!!

i have high hopes for this although it could all go off what with the arm and honey etc... so how do i know if its off? will there be visible mould?

Reading the discussion on adding honey with interest ... We are looking to experiment with honey, but were wondering how much to add if you put it in at the barrelling stage?

Would substituting honey for the same weight in sugar work, or is this too much (or little)?

Also, does anyone know what, if any, beers would benefit from a 'honey-kick'? The wherry we're brewing at the mo' has a lovely toffee flavour & adding honey may be a bit of overkill ... Any thoughts?

kate, you have to ask yourself, `what does the wherry need that it doesnt already have?`
personally, i doubt you would improve it with honey. :)

the amounts hard to guesstimate... i put 3ml in per bottle thingking that your supposed to add half a teaspoon of sugar which is about 2.5ml .. different honeys have different levels of sugar, some tell you how much sugar per 100g on the bottle which is helpful...

i'll let you know how mine all turns out!

I added about 250g sugar to a coopers lager kit I made up at the weekend. I am hoping for some subtle flavours and didn't want to kill it with my first experimentation.

The last couple of times that I've made Woodfords Great Eastern ale I've added a large jar of honey (TESCO value so nothing too posh) to it at the start of fermentation, not only does it knock the strength up a bit, but adds a lovely lingering honey taste to the finished pint.

GOOD WORK!!! thats the sort of thing i wanted to read! i'll do that next time (although with some local organic stuff hopefully)! although i wanna do one of them brews with the big teabags full of hops can remember the name of the kits now...

Will try a dollop of honey (Lidls finest!) when we barrell up the Geordies at the weekend.

A colleague of mine did Yorkshire Brewey Stonewall (which has hop pellets) with Honey for secondary fermentation and it was the best beer I have ever tasted, he gave me his instructions. I have the kit but waiting for locally produced honey.

eating local honey is supposed to boost your immunity to the pollens in the area thus helping combat hayfever

you could argue that this is medicine now for sure

ok i'm on the last few honey ones tonight, its really lovely and cleared a week earlier than the sugared bottles.. much deeper fuller flavour to it. got another nelsons revenge brew on the go already but bought some enzymes to help things along and gonna honey all the bottles , 3ml of organic NZ forest honey! beauty

Currently supping our honey experiment......and it's lovely!
Did the f.v as normal and then added the same amount of honey as they recommend for sugar when barrelling. This was into a 'Geordie Scottich Export', and it's a really light coloured pint with honey as an after taste....definately worth the experimentation!
Read a few things about sterilising/boiling the honey first to prevent bacteria, but just went for the dollop it in approach in the end...seems to have done the trick!

yeah it made such a difference compared to the ones i primed with sugar. dollop on. gonna try different honeys next time
