On the subject of priming ,that last Morgans iron bark dark ale I did turned out a bit flat with 85 g table sugar added to f.v.I use pet bottles ,so when I did the coopers dark ale I used 125g sugar .Thought Id gone a bit mad at first as the first one the wife opened [to add some to a stew] blew out of the top with froth everywhere. :shock: It was because it was at room temperature.Itook them down the cellar to chill and now its fine when I open one with nice head retention not too fizzy.50/50 dme demerara.Wouldn't bother with the Morgans again it cost more and wasn,t as good as Coopers.

Hi all
I brewed up a coopers stout kit on Friday evening, Could only get extra dark dme so I thought what the hell I will give it a go, it smells amazing and the head is nearly creaping out of the lid of my fv even though I only did 20 litres :shock: I will top it up to 23 litres when the beast has settled down.

I'd be tempted to leave it at 20l for a 'fuller' and stronger brew. :wink:

I might do that, I took an sg reading before pitching the yeast 1.045 so if I can get it down to 1.010 it will be 5.2%.

I have at the ready 1x coopers stout and 1kg of medium dme, is there any special way to makeup this brew like with the yeast or otherwise. or is it just a case of swapping the dme in place of the sugar???

Yeppers. Way I do it is just swap their sugar for my 1 Kg of MSDM. Ye may also wish to drop the water level a bit, if ye want a slightly more 'pokey' brew. Straight made Coopers Stout, sans sugar, won't exactly wreck ye head. It's strength is its flavour :wink:

I have tasted some good stouts, but this is up there with the best.

Not to the masters recipe (500gms each of med & dk spray malt, primed with tsp of the best unrefined mollases sugar) but by god this is good even after just a week in the bottle, if it lasts I wonder how good it will be in a few months. Think I had better get another kit.

Took a final sg reading last night, it's down from 1.045 to 1.006 thats 5.7% gonna keg it today. I tasted my sample and it tastes great allready :D

Hi, I just made Ditch's 'extra' Stout last night. Used 1kg of med spraymalt and 300g of glucose. Only filled fv to 4 gallon mark in an attempt to stop the froth escaping the fv. Took hydrometer reading out of curiosity and og was 1060. Was gonna top up with water when initial vigorous fermentation had calmed down but what the hell-I'll just leave it and have 4 gallons of rather stronger stout-hence the 'extra'.Cheers and I'll keep you posted.

Yesterday I took a half pint of Coopers out of the keg having had my last pint of it 4 weeks ago. This stuff just gets better and better even with about 15 pints left in the keg. I think I'll be doing a special xmas brew with it this year!
