Wheat with a twist

I was hoping to brew something using up the wheat malt I have, that was also a little spicy. Does anyone have any suggestions?
So far I was thinking:

55% Pale Malt
30-35% Wheat Malt
10-15% Apple Juice
1-2oz Ginger
Hops (prob Fuggles or something German, cant remember what I have)

Something a bit strong and spicy for winter with low bitterness.
I know it might seem crazy but that is what I came up with on the train today and I have no one to bounce ideas off so it is up to you to shoot me down... Might also brew something darker and more warming but am not sure yet.

If you have some Bramling Cross (distinctive, strong spicey/goldcurrent flavour) that could be a good option. Sounds like your making a festive ale ?

Attempting to. My friends and I are planning on going away during mid-winter so I thought I could make a brew to accompany us. Thanks for the hops advice, I'll have a look into it.
